Blueberry Cheesecake Bars

Looking for a simple recipe for dessert, blueberry season is perfect? Here’s a simple recipe for bars for cheesecake very special with the addition of two fresh blueberries and blueberry.

This cheesecake bars are much lighter than traditional cheesecake. They bake in a 9×13 inch dish to be, so you do not need to ask you to dig your springform pan and not a water bath.

Blueberry Cheesecake Bars Recipe:     

6 tablespoons butter, melted
2 cups cracker crumbs
2 (8 ounce) packages cream cheese, soft
3 / 4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 teaspoon juice
1 (10 ounce) jar blueberry
1 cup blueberries

Preheat oven to 350F. A position oven rack in center of oven. In a 9 × 13 inch baking pan, combine butter and cookie crumbs. Press the mixture evenly in bottom of pan to form crust, then put the pan in the fridge so it can cool the dough while you prepare the filling.

In a large bowl, beat cream cheese with electric mixer at medium speed until light and stir. Add sugar, eggs, vanilla and lemon juice and beat until creamy and well combined.

Remove the crust from the refrigerator. Stir jam into the glass until it spread and then spread evenly over crust. Sprinkle blueberries over the jam, then spread the mixture to the cream cheese evenly over blueberries.

Bake in center of oven for 30 minutes, until the beams are visible and easily inflated. Taken from oven and cool to room temperature. Then cover with plastic wrap and let cool completely in refrigerator. Cut into desired size and shape of bars.

Number of servings depends on how big or small you cut the bars.
